Apple pie wk 3 vid 3.. research

I did a little research for maybe 15 minutes out of my morning so I could pretend to sound like I knew a little bit about apples lol. Credits to my research include:

My preference for my needs turned out to be from our great friends at @kingarthurflour because they gave me the information I was looking to find. I wanted to know the best apple to use for a pie based on firmness and flavor, and they told me exactly what I needed to know. Long story made short... I'm going to use what I have at my store which will likely end up being a combo of Jonagolds and Granny Smiths.
