Hey y'all I made this cake with all of my favorite ingredients that I like in a cake. I think it is better than a hummingbird cake. If you like cream cheese icing then use it on these layers. I am a southern girl born in raised in Collard Valley in Polk County Georgia. We went to church on Sunday, school during the week, the grocery store on Friday’s and that was our life. No vacations, no camping, just plain old southern country people
NOW FOR THIS FAMILY RECIPE:
Godsend Cake Recipe:
1 Strawberry Cake Mix
3 large eggs
1/2 cup butter room temperature
1/2 cup buttermilk
1/2 cup pineapple juice
3 pineapple rings sliced thin and chopped well
1/2 cup flaked coconut
1/2 cup chopped pecans
3 medium or 2 large very ripe bananas mashed
Add eggs, pineapple juice, and buttermilk to mixer. Mix on low. Add cake mix and butter and mix well. Add fruit, nuts, and coconut and mix well. Pour batter into 3 well-greased and floured cake pans. Bake at 325 degrees for 40 minutes. Toothpick should come out clean. Cook longer if needed. Cakes with fruit take more time to bake. Do not open oven and check until at least 40 minutes have pasted..
To ice beat 1 large carton of heavy whipping cream with 1 teaspoon vanilla extract. Do not add sugar to whipping cream. This cake is super sweet and the unsweetened cream pairs very well with it. Ice cake and garnish with sliced fresh strawberries.
