Zucchini Relish
(My Sweet & Hot version)

12 Cups Chopped Zucchini (Any Summer Squash)
4 Large Onions Chopped
2 Red Bell Peppers Chopped
2 Green Bell Peppers Chopped
Optional Hot Chillies Chopped to your taste
1/3 Cup of pickling salt
3 Cups White Vinegar
4 Cups White Sugar
3 tbsp. Corn Starch
2 tsp Celery seeds
2 tsp. Mustard seeds
2 tsp Turmeric


Combine vegetables with pickling salt and leave over night. Drain and Rinse. Combine remaining ingredients with vegetables and boil fro 20 minutes .Put in sterilized jars.
