How to make the healthiest Keto Blueberry Pancakes at only 2gm net carb - Soft, Fluffy & Delicious ! There's nothing like a stack of pancakes for breakfast. If you search the internet, there isn't any shortage of low carb or keto pancake recipes out there but this is the one I love the most. There is a secret ingredient to make it soft and fluffy and that is sparkling or soda water. And it really works ! Even though this recipe uses coconut flour but the taste of coconut is quite mild. If you do not fancy the coconut aroma then add some vanilla extract and it would help to mask the flavor. As coconut flour is so low in carbs, each of these blueberry pancakes is only 2 gm net carb. If you make them plain, it's only 1 gm net carb each. This recipe makes about 18 medium sized pancakes.

Instead of mixing the blueberries into the batter, it's better to add them after you have scooped the batter onto the pan as this will ensure equal amount of blueberries on each pancake. These keto blueberry pancakes are so easy and quick to make. They're soft, fluffy and delicious. I just love them with butter and sometimes, I add some pan fried bacon on the side for that mix of sweet and savory flavors.

INGREDIENTS
1/2 cup coconut flour
6 large eggs
1/4 cup melted butter
1/2 tsp baking powder
3/4 cup soda or sparkling water
Low carb natural sweetener to taste

DIRECTIONS
1. Add all ingredients into a bowl (except soda or sparkling water). Whisk until smooth.
2. Add the soda or sparkling water and stir to mix well.
3. Heat up a pan then brush with some melted butter.
4. Spoon batter onto pan then add equal amount of blueberries on each pancake.
5. Cook at low to medium heat. When the top starts to bubble, the sides are dry and bottom of pancakes are browned then flip over and cook for awhile.
6. Remove pancakes and serve with butter.
