Instead of mixing the blueberries into the batter, it's better to add them after you have scooped the batter onto the pan as this will ensure equal amount of blueberries on each pancake. These keto blueberry pancakes are so easy and quick to make. They're soft, fluffy and delicious. I just love them with butter and sometimes, I add some pan fried bacon on the side for that mix of sweet and savory flavors.
INGREDIENTS
1/2 cup coconut flour
6 large eggs
1/4 cup melted butter
1/2 tsp baking powder
3/4 cup soda or sparkling water
Low carb natural sweetener to taste
DIRECTIONS
1. Add all ingredients into a bowl (except soda or sparkling water). Whisk until smooth.
2. Add the soda or sparkling water and stir to mix well.
3. Heat up a pan then brush with some melted butter.
4. Spoon batter onto pan then add equal amount of blueberries on each pancake.
5. Cook at low to medium heat. When the top starts to bubble, the sides are dry and bottom of pancakes are browned then flip over and cook for awhile.
6. Remove pancakes and serve with butter.
